SESAME CHICKEN SALAD

SESAME CHICKEN SALAD

Yield: 4 servings (1 Serving = 1/4 of salad)

INGREDIENTS

- 2 single chicken breasts, grilled
- 3 tablespoons sesame seeds
- 1 head leaf or bibb lettuce, in bite size pieces
- 1 can water chestnuts, sliced, rinsed
- 1 cup snow peas (pea pods), sliced
- 6 green onions, sliced

Dressing:

- 2/3 cup orange juice
- 1 tablespoon oil
- 2 tablespoons rice vinegar
- 3 tablespoons water
- 1/4 teaspoons fresh ginger
- 1/4 teaspoon fresh garlic, crushed.

DIRECTIONS

I usually marinate the chicken breasts in teriyaki
marinade the day I make the salad. Grill the chicken
breasts, slice them, and sprinkle with sesame seeds.
Wrap in foil to keep warm while preparing salad.

In large salad bowl, whisk together the dressing
ingredients. Add the lettuce, water chestnuts,
snow peas, and onions and toss well.

Divide salad onto four plates and top each
salad with one half of each chicken breast.

Calories:180; Fat: 9 grams; Carbohydrates: 11 grams;
Protein: 17 grams; Sodium: 37 mg; Cholesterol: 36 mg
